    I love butternut squash, roasted with onions and a little olive oil, then topped with freshly grated parmesan cheese. Not really a summer dish…but its cousin zucchini prepared almost any way is my veggie of choice for this time of year!

    My favorite veggie is actually the artichoke. I learned how to make stuffed artichokes from my MIL and they are the most delicious thing! I stuff whole artichokes with a seasoned breadcrumb mixture, drizzle with EVOO and put them in a pressure cooker for 20 minutes. Mmmm….

    I love lots of veggies, but home grown tomatoes are my favorite. They are great sliced with a little salt, but I also love to make a fresh garden salsa with them.

    I actually love sautéed brussel sprouts. When I was little you couldn’t get me to touch a brussel sprout, now I can’t get enough of them.

    One of my favorite veggies is Cabbage. I like it steamed with some smoked turkey wings in it for added flavor…YUMMO!

    I like Asparagus….grilled on the BBQ with Olive Oil and then sprinkle with Parmasan cheese before serving.
    and I love fresh Ripe Red Tomatoes from the garden, still hot from the sun…the Best!

    I lost most any green vegetable, and my current favorite is brussels sprouts. Trader Joe’s sells them shredded in a bag, so I just saute them with a tiny bit of butter and olive oil until they wilt, then sprinkle chopped walnuts and lemon juice over them to serve. Yummy – even my husband eats them.

    That’s a tough question because I pretty much like all vegetables, but I would have to say the romaine lettuce. I love a nice fresh, crisp salad and the romaine stands up well to almost any dressing.

    I love fresh tomoatoes, my favourite way to have them is in a bruschetta, but they also taste good in a simple salad with fetta cheese, olive oil and pepper.

    This may sound weird, but butternut squash. I don’t know why, but my mother always made “Pumpkin Pies” out of butternut squash. After trying to make my pie from a real pumpkin, I think I understand as they are almost impossible to get split without an axe! LOL Butternut squash also make delicious low PP+ “French fries”!

    I enjoy many veggies but recently have cut back majorly on the sugar intake and when i have a sugar craving i bake a sweet potato until it’s so soft & tender and SWEET!! It tastes like i’m eating a dessert : )

    Spinach as it many uses. Steam it, add it to your smoothies, chop it raw for salads. My favorite use is steamed!

    I love spaghetti squash.It amazes me how much it’s like spaghetti when cooked.I mix it with sauce or seasonings & eat instead of pasta.

    Definitely the tomato. I love it in absolutely everything – my favorite way is in a cucumber onion and tomato salad, with feta cheese and avocados.

    I do not think there is a veggie that I do not like! I like a lot of my veggies raw and the rest roasted lightly with olive oil a pinch of salt and pepper!

    Fresh corn on the cob, shucked, steamed, then slathered in butter and sprinkled with salt – It is not the most healthy preparation or vegetable, but it is oh so tasty.

    Brussel Sprouts are delicious. I cut them in half, and saute them in butter, and when cooked through, I toss in more butter and some bread crumbs. Delish!

    I love carrots. When I roast them with olive oil and salt, I can eat the whole bunch. They also make great pureed soups and taste fabulous cooked with butter and honey.

    When I was a little girl, I would visit my Grandmother in the summer months where we would go pea picking on my uncle’s farm. We would come home and clean the peas, and she would prepare them using her famous “Creamed Pea’s” recipe – yummy! 🙂

    I adore onions, expecially sliced in very thin rings; one juicy way to prepare them is dipping them into milk, then into some flour and finally fry them for just a little bit… they come out better than chips and much more tasty 🙂

    I love all veggies, especially fresh out of the garden in the summer. If I had to pick just one, I’d say a tomato – fresh off the vine, slice on a plate with just salt and pepper. Nothing fancy, but nothing tastes as good!

    Love love love fresh green beans wrapped in bacon and sprinkled with brown sugar then baked in the oven. Yum yum yum! I love this release, can’t wait to get the veggie and new school sets!!! 🙂

    I like most vegetables, either in soups or salads. One recent preparation that I have really been enjoying is esquites, which is a Mexican corn salad.

    My favorite veggie is roasted cauliflower. It was once a hated veggie on my plate growing up until I went to a friend’s house and I tried them roasted. My mom boils them in butter and water. 🙂

    Roasted beets – olive oil, wrap in foil, bake, cool. Add to a salad – EXCELLENT! This really brings out the natural sweetness of the beets.

    Wonderful samples here of your new products!

    My favorite might just be a good ripe tomato, sliced and sprinkled with a little salt and pepper. Some may say that’s actually a fruit, so I’ll add green beans fresh from the garden.

    Are tomatoes a fruit or a vegetable? No matter, I love them! In pasta sauce, in a soup, in a salad. But my favorite way to eat a tomato is fresh and warm from the garden…perfect!

    Corn on the cob and Tomatoes for me PLEASE!! 😉 I LOVE to wrap them in tin foil and season with butter, EVO and seasoning and water and cook for about 5-10 min and yummy they are delicious plain or on bread or in salads!! THANKS for the chances to win and have a FABULOUS WEEKEND!! 😉

    I guess I would have to say a potato. It’s basic to every meal for me. I like it baked, scalloped, fried, roasted, grilled……any way at all. Fresh corn comes in a very close second.

    I love all veggies, but my recent favorite is Asparagus. I’ve got a fabulous recipe for roasting it in the oven with olive oil & garlic pepper, then at the last minute a little Parmesan cheese! So, so yummy!

    My favorite veggie would have to be avocado, though it is technically a fruit. Who knew?
    I like to eat it with the avocado thinly spread on crusty bread, a light smear of mayo, and a sprinkle of salt & pepper. Yum!
    I could eat this every day.

    I luv all veggies…. broccoli and squash are two of my all time favorites..I luv them both steamed with a little smart balance. I also luv squash casserole with the gooey cheese and bread crumb topping…yummy!

    My absolute favorite is butternut squash,but the way my mom makes it. She somehow gets all of the excess moisture out, has the perfect consistency, adds a little nutmeg, butter and salt-it’s pure squashy perfection.

    My favourite veggie is definitely green beans. I love them (of course!) the way my mum makes them. She sautes them in a pan with a little olive oil, some diced shallots and little pieces of roasted red pepper. She’ll often serve them with toasted slivered almonds. Best veg dish ever, hands down (although I think I’ll probably have competition 😉

    Hmmm, I was going to answer tomato, but is that a fruit? LOL!
    Either way, I love it sliced and added to sandwiches, croissant and burgers. I also will just eat it as is in slices, with some salt & pepper or add it to salads. It’s also great in sauces, chill and in a zucchini casserole.

    I love corn on the cob sold by food trucks at the state fair! Although, I make corn on the cob at home it is just not the same! My memory and my taste buds get happy when I get one of those tasty creations!

    My favorite vegetable would be hands down the delicious tomato. I prefer to eat it in salads, on sandwiches, but I have been known to cut it up in hot, buttered pasta.

    This set if my all time favorite! I’ve been really into taking sliced yellow and green squash and layering it onto a cookie sheet and drizzling an herb-infused oil on it with S&P and bake away until softened and browned. Scrumptious!

    That is THE hardest question you have ever asked!! I love ALL vegetables and really had to stop and think about this one. One high up on my list is grilled asparagus with olive oil, salt and pepper. But then fresh garden tomatoes….hmmmmm….but I forgot carrots…..oh no…can’t give you just one!

    My favourite raw veggie would have to be the fabulous tomato – they are so fresh and filled with flavour. I love tomatoes with bocconcini, basil and a drizzle of balsamic. If we are talking about cooked veggies, there is nothing better than caramelized roasted cauliflower – yum! 🙂

    Love all my veggies! Very hard to chose a favorite, most of them are great simply roasted in the oven with olive oil, sea salt and ground pepper! Brings out a hint of sweetness! This prep can be used for brussel sprouts, asparagus, broccoli, cauliflower, zucchina and squash, sweet potatoes, kale, beets……
    This will be one of my all time favorite releases from PTI!

    My favourite vegetable is pumpkin and love it roasted with a little olive oil and seasoned with salt and pepper.I usually do a whole tray full and then the leftovers can be made into soup with some onion,bacon,chicken stock and sour cream just before serving.

    I usually eat all my veggies just steamed and plain. But I found a simple little recipe for green beans that I tried and it was fabulous!!I put fresh green beans on a baking sheet sprayed with pam. Sprinkle a little parmesan cheese and chopped garlic on top. Toss and bake at 425* for about 10 minutes, turning halfway thru. Yummy!!!

    I have become a huge fan of roasted vegetables! Whatever we have on hand–mushrooms, onions, potatoes (white or sweet), carrots, parsnips, cauliflower. In the summer use fresh veggies–squashes, peppers, onions, etc. Cut to similar size, lightly drizzle with you favorite oil (one that is good with high temps without turning bitter or one whose flavor won’t over power the veggies), season with salt and pepper. Roast at 425 degrees till your desired doneness and crispness. I love to serve with a balsamic vinegar glaze! Delicious!!!

    This is a hard one because vegetables are my favorite food and it’s hard to narrow one down! Maybe I should say vegetable soup! If I was allowed to have only one vegetable, I would have to say broccoli. I like steamed broccoli generously added to chicken alfredo, but there are so many ways to prepare it.

    I love just about any veggie grilled, roasted, or sauteed, however my all-time favourite is the artichoke. I used to live in northern Califonia, there is a town there, Castroville, and they had an annual artichoke festival! Now that I am living in Canada, I miss them. A lot. We get small wilted ones on our grocery shelves and they cost a fortune.

    Roasted brussel sprouts with a ginger maple glaze…..easy. Just roast the brussell sprouts and pour a mix of maple syrup and ginger powder over them while still warm. Yum! Even the kids eat them.

    My current favorite is sweet potato. I am a vegan and eat huge quantities of veggies.
    I take a whole unpeeled microwaved sweet potato and put it in my Vitamix with 2 cups of vegetable broth and whirl away. It tastes creamy and decadent, but has no dairy or fat! Yum!

    My favorite veggie is peas. My mom never served them when I was a kid, only in casseroles (and they were canned!). But when I tried fresh peas for the first time I LOVED them! I like them steamed and plain.

    My favorite veggie is grilled romaine lettuce. Yes, I said grilled lettuce. All you have to do is halve a head of romain, drizzle olive oil, salt pepper and minced garlic and grill. My hubby and daughter fight over it every time. It’s delicious!

    I would have to say all veggies but my all time favorite is eggplant! I LOVE making eggplant parmesan! Thinly sliced and lightly breaded. This year will be my first attempt at eggplant mornay with shrimp! I just need my eggplant to grow! Beautiful release again!

    Not sure there are too many veggies I don’t like and I am also not sure there is really one I like better than another. I give equal time to all of them. lol

    My favorite way with the majority of them is to simply roast on the BBQ with EVOO, a little Himalayan salt and pepper. Have discovered though, Brussel Sprouts are very good raw in a salad. Almost prefer them better that way than roasted…..yum, tasty!

    I love asparagus drizzled with olive oil and seasoned with Kosher Salt then roasted for 10 or 15 minutes at 350 degrees! The asparagus is still slightly crunchy and very yummy!!

    I love all my veggies! Only one thing beats a bite of the first tomato of the season on a BLT and that is our family recipe we have renamed “Harvest Stew” because we harvest most of the ingredients from the garden (the real name is Spicy Aegean Shrimp). Jumbo shrimp is sautéed in butter with fresh lemon juice, oregano, rosemary, cayenne pepper and chopped garlic. Add corn on the cob, new potatoes and baby lima beans. Serve with a good, crusty roll for sopping up the juice….delicious!

    My favorite would have to be asparagus. I like to cover it in a little olive oil and sprinkle lemon pepper seasoning over top. I cook it for 10 minutes at 350. I then sprinkle a small amount of Parmesan cheese and broil it until the cheese melts. It’s extremely yummy 🙂

    My very favorite veggie is corn on the cob – anyway you can cook it, then add a little salt and butter and I’m in heaven. Unfortunately, my stomach doesn’t do well digesting this lovely vegetable so my next favorite is Waltham Butternut Squash. I usually cook it in boiling water and then mash it with an electric mixer. Again, salt and a little butter – sweet!

    My current obsession is with fennel. It’s incredible thinly sliced and mixed with parmesan, toasted pecans and lots of fresh orange and lemon zest. Then throw it on top of some lovely greens with olive oil and a squeeze of citrus. But I have regular veggie cravings of eggplants, beets, brussel sprouts, and spinach.

    We love lots of veggies in our house. I crave greens, like kale or mustard greens. You cook (boil) them with a little piece of ham and serve them with a bit of vinegar…I prefer rice wine vinegar, or a bit of mustard. I expect to see a little cookbook now, with all these recipes.

    I have never met a vegetable that I didn’t like! I can’t even begin to think about one over the other. We probably have Broccoli, asparagus and brussel sprouts most often. The broccoli and asparagus, as well as most other vegetables, I like best just steamed. Lately my husband (he does all of the cooking) has been making the brussel sprouts sautéed with a bit of bacon or pancetta and onions. Very tasty!!!

    Gosh, picking a favorite veggie is hard stuff! I love lots of them and most anything roasted with garlic and olive oil. But in general, in winter, my favorite is kale in soups and sauteed for pasta dishes-it holds up well; in summer it has got to be fresh tomatoes, raw or in a caprese salad. Yum!

    Hmm, my current fave is roasted beets! I had never had beets up until a few short years ago but I just love them now, as does my 5 year old. I like roasting them with olive oil then drizzling them with balsamic vinegar and a touch of salt. Simple but good!

    Fresh asparagus is my favorite vegetable. I like to sauté it in a little butter or wrap several stalks in partially cooked bacon strips and then bake until the bacon is fairly crisp.

    Asparagus! My husband puts it on a cookie sheet, drizzles it with olive oil and sprinkles it with Kosher salt. Then he puts it on the grill for just a few minutes so it is warm but still crisp. I top it with shaved Parmesan cheese. Yum! I am getting hungry!!! Thanks for all the inspiration this week, great release!!!

    I love tomatoes for their versatility but my favorite way to eat a summer Beefsteak is with a drizzle of good olive oil and one of thick, sweet balsamic. Add fresh basil or cilantro and it’s the perfect appetizer in hot weather.

    Summertime veggies means Zucchini casserole at my house. This is an old family favorite my mother started many years ago to utilize the excessive crop of zucchini that always came from her garden. It’s a vegetarian delight loaded with fresh zucchini, onions, tomatoes and three cheeses!

    My favorite veggie is zucchini. It is such a versatile veggie. My favorite way to make zucchini is simply saute with onions and butter,sometimes adding yellow squash and maybe grape tomatoes. I also include zucchini in my ratatouille. Finally great for baking – breads & muffins

    I’m very lucky that in my family we all LOVE veggies. I think our favorite is actually of blend of winter veggies from the Farmers Market, roasted with shallots until they’re a little carmelized. Yum!

    Easy question! My favorite food (not just my favorite vegetable) is carrots. Ymmm! I love them any way I’ve ever had them. My current favorite is to have them roasted with cumin. Sometimes I get a 25 lb bag of Giant carrots from a food coop called Bountiful Baskets (bountifulbaskets.org) and they are gone in a couple of weeks. I think that heaven’s menu must surely have carrots in every meal! 🙂

    The vegetable I always have to hand is leeks as they are just so versatile. I never make a soup without them, I add sauteed leeks to mashed potatoes, they’re heavenly wrapped in slaces of ham and baked in a cheese sauce and they’re even good raw and finely sliced in a salad. Who could ask for more?

    Brussel sprouts and carrots! Cut the brussel sprouts in half and slice the carrots into 1/4″ pieces. Drizzle with olive oil and balsamic vinegar. Toss to coat. Roast in oven at 350 about 20 minutes. Sprinkle with a little sea slat and fresh ground pepper.
    Delicious!

    I’d have to say my favorite vegetable would have to be broccoli. Unfortunately I love it with lots of melted cheese or in a casserole with cheese. My sister-in-law gave me a wonderful broccoli casserole recipe with fresh broccoli covered with cream of mushroom soup and parmesan cheese. It is so simple but so good!

    That’s such a hard question! I love nearly all vegetables. I eat a lot of salads all year round, and the one thing that I can’t do without is cucumber. For me, a salad absolutely must have cucumber or it’s just not as good.

    I just love vegetables! A big, fresh salad is the best. Of course, there’s asparagus marinated in a blend of olive oil, hint of lemon, garlic and balsamic and grilled.     So hard because there are so many tasty veggies. Uncooked, would be REAL tomatoes – you know; the ones from the wild that don’t taste like recycled newspapers. However on the cooked side, it would be green-beans. I used to live/spend time in the mid-west, and green-beans, well cooked with bacon or ham, was a staple. It’s still my favorite, even though I now live in Boston.

    Fresh corn on the cob right out of Grandma’s garden was always THE best! Picking corn with her and hearing stories of when she was a girl on the farm sure added to the flavor, I am sure. Now a spin in the microwave for 4 min. per ear preserves the nutrients and flavor, but eating it without Grandma here is just not the same. 🙁 But I still love fresh corn!

    One of my many favorite “veggies” would have to be peppers. Love ’em roasted…we bake (usually red peppers) in the oven, remove when blackened, cool then peel skin. Sprinkle EVOO, little garlic salt and pepper and EAT on sandwiches, as a side dish any way, just love them!

    Tomatoes are my favorite, but not sure if they count since they’re actually a fruit. I’ll eat them most any way – right from the garden; sliced with a drizzle of olive oil, dash of salt and sprinkling of basil; roasted on the grill; topped with breadcrumbs and broiled like you find in a traditional English breakfast; and boiled into sauces.     From someone who rarely ate vegetables as a kid, I have grown to love most veges. In high school when I was dating my now husband, his mother would fix a cheese sauce for me to put on my veges so I could learn to eat them. The other siblings in the family were a little annoyed to say the least because she only made enough sauce for me. Now I can say I like them all except lima beans and I eat broccoli raw, steamed, chopped, whole, any way it comes. Thanks for a great release.

    I think I will have to go with cucumbers. They are good in salad, with a dip, with a marinade, for flavoring water, and of course, by themselves. Pretty much, they are an all around good fresh vegetable. Thanks!

    I really do like most vegies and it is hard to say what is my favorite. Tomatoes sprinkled with a little sugar and a smear of mayo, roasted or grilled asparagus, fresh green beans marinated in soy sauce and roasted…just to name a few!

    It is a tie between Asparagus and Broccoli . I I like the Asparagus roasted with olive oil and seasoned with Montreal steak seasoning or just blanched then submerged in ice water cut into tiny pieces and made into a cold salad with tomatoes, cucumbers, green onions and tossed with some Asian sesame dressing. The Broccoli I love roasted also or raw in a cold salad Here’s the recipe…

    Serves 6-8.
    1 bunch uncooked broccoli*
    ½ cup crumbled cooked bacon
    ½ cup cashews
    1/3 cup raisins
    ¼ cup chopped red onions

    Dressing
    1 cup mayonnaise
    1/3 cup sugar
    2 tablespoons apple cider vinegar

    Mix the first five ingredients in a large bowl.
    In a second bowl, beat dressing ingredients together gently until smooth.
    Toss the salad with the dressing approximately 10 minutes before serving to allow flavors to meld. Serve on chilled salad dishes.

    To tell you the truth I love all veggies – raw or cooked. Growing up my parents always had a large garden. My grandparents had a farm. My father every year would get out his seed catalogs and try new and different plants. We ate fresh veggies all summer and fall long. Once winter came, my mom was pulling stuff out that she had canned or froze. She still is sending stuff home with me today.

    I love almost all veggies! A great salad with home grown tomatoes & cucumbers!! In the summer I go up to the local farmers market in town and pick up all types of veggies, they are so much better than store bought!

    Great question! I think it would have to be beets–they are sometimes hard to find fresh, and they take a long time to cook but they are worth it–better than candy! And the fresh beet greens that go along with them are great!

    Definitely artichokes. They are so expensive we don’t have them real often so we really savor them. Steamed for 45 minutes (give or take depending on the size) then each leaf is dipped in a mayo/milk sauce. It’s such luxury when each person gets one of their own!

    I LOVE garden tomatoes! Just quarter them, add in fresh green peppers, sliced onion, a tsp of salt and 2 T of olive oil. Combine and let the flavors enhance! Veggies are not my favorite (especially the stronger tasting ones) and this recipe I could eat every !day

    Favorite veggie? Probably broccoli; which is funny since I hated the stuff when I was a kid! I like it fresh in salads and such; but my favorite way to prepare it is probably to steam it and cover in cheese sauce. Nothing like wiping out all the great health benefits he he! But it’s so yummy though!

    I love so many, but I am looking forward to my green beans. I boil them, then put in ice water. They are then added to sauted shallots in butter with rosemary and hazelnuts, and salt. Delish. It’s a Martha Stewart recipe.

    Asparagus grilled with olive oil, sea-salt and pepper in the oven….or pan fried on the stove top. Add a little fresh shaved parmesan cheese on top and you have a meal in and of itself! 🙂

    I love all veg, except brussels sprouts. Fava beans are probably one of my all time favs thou. I like most veg raw, unless it’s squash or beets. Onions are another veg that I use alot daily I can’t cook ANYTHING without them.

    Roasted Brussels Sprouts: Cut the stems of the sprouts and halve them. Toss with olive oil, salt and pepper. I also add a Greek seasoning called Cavender’s that I like. Roast in a hot oven, like 425, for about 30 minutes, tossing once or twice in the process. I have converted any number of “I don’t like Brussels sprouts” people into “These are delicious” with this simple recipe.

    Omg, that a fantastic reveal!! Love everything!, I love corn on the cob microwaved with the husk on for 1.5 minutes. The husk peels away very easily and the corn is crisp!! I also love edamame soybeans. Eaten frozen they are wonderful cool snacks on a hot summer day!!!

    I became a lover of yellow squash because of my grandmother’s squash casserole she made for family holidays. It was delicious and in high demand. Now I make it for my family with our own yellow squash we grow in our garden 🙂

    I love green beans made with bacon and caramelized onions. Probably not the healthiest way to eat them, but oh are they ever good this way! Also a fan of steamed artichokes, salads, corn, snap peas, broccoli, zucchini.

    I LOVE asparagus. I have a yummy recipe (maybe from Sunset magazine) for a summer asparagus salad where you blanch it, and then mix it with red onion, feta, fresh basil, and pine nuts. The dressing is a dijon mustard, olive oil, lemon juice mix. It’s so incredibly good! 🙂

    I guess it’s a toss up between Green Beans, blanched and then put in a skillet that I have sauted a little onion in Lemon Olive Oil. Top that with toasted almonds 🙂 and Heirloom Tomatoes. They go in all salads and great pasta recipes.

    Don’t laugh too hard….I love parsnips. Peel, slice in thin circles, boil till just tender, drain, spray olive oil from can in large fry pan, add butter, fry them till brown. Add more olive oil spray or butter if they dry out too much while frying. OMG…..Yum. We don’t eat as many potato’s any more. The vitamins and nutrients are excellent for you!

    Corn on the cob is the best! For 1 person, husk an ear of corn, wrap it loosely in wax paper, microwave for 3 or 4 min., let it stand for a minute or so, add butter, salt and pepper. Ummmm!!

Lately I’ve become more partial to grilled veggies – peppers, zucchini, etc. To munch on raw veggies – green, red, yellow, orange peppers – so flavorful. Of course the King of all veggies for me is the potato. Baked, mashed, boiled, fried, you name it, I love it!

    Actually been a vegetarian for over 20 years(not anymore since a year…….)and I LOVE veggies..so hard to choose only one……maybe carrots..eat them plain just peeled or in a nonstick pan with a veggie broth cube and some water to let them steam ….love asparagus the white ones…just boiled with a sauce and hard boiled eggs and some cooked potatoes….

    Asparagus! Grilled with a light coating of olive oil and sea salt. Sometimes I will add a sprinkling of Parmesan cheese. Yum!

    Although I do love me a great steak, I am pretty sure I am a closet vegetarian! I love vegetables! My favorite has to be grilled asparagus. I toss it in olive oil and sprinkle with lemon pepper, then grill for a few minutes until slightly charred but not burnt, and so that they still have a slight crisp to them. Yummy!

    I love onions. Onions in soups, stews,salad – sauteed, raw, fried. Onions add the perfect seasoning to most any dish and are available year around so one is never deprived of their crisp flavor.

    Asparagus – steamed until crisp/tender with a touch of butter and salt and pepper. Second choice would be corn on the cob that has been cooked on the grill and drenched in butter .. yummy!!

    I love almost all vegetables!! If I had to choose it would probably be fresh spinach. It’s so yummy as a salad or in wraps and sandwiches not to mention so good for you.

    I love asparagus- I prepare it by drizzling it with olive oil and a bit of kosher salt then roasting it in the oven at 375 until it is just crisp. Yum!
