Strawberry jam! Our family started a tradition back when the boys were small (now 15 & 20). We would all be in the patch picking berries for jam and taste testing! At home, I’d hull the berries, our boys would help, the older measuring the 7 cups of sugar and the younger one standing on a stool would keep count of the cups of sugar and berries! Dad manned the hot water baths & filling the jars. We’d have jam for the year and to share as gifts! Strawberries are very special in our home!

Always needing to eat healthier, I make a strawberry shake for myself a few times a week. One cup of lowfat milk, 2 heaping tablespoons of vanilla yogurt, a couple of slices of banana and lots of frozen strawberries (a good way to salvage those berries that are starting to look unappetizing. My kids need a little honey or sugar in the mix but for me it is thick and delicious and healthy.

I love to make trifles with strawberries. Just bake a yellow or white cake and allow to cool. You can you vanilla or my new fave, cheesecake pudding. You also want a container or 2 of cool whip. To make the strawberries a bit saucy, add some sugar to make them a little syrup-y. Cut the cake and layer all ingrdients in a bowl. It is best to sit overnight. There are no exact measurements, everything is to taste. YUMMY!!!!!!!!

My favorite strawberry recipe is for a strawberry pie that my mom made for every get together in the summer. It was strawberries, wild strawberry Jello, a little cornstarch, sugar and water. You would arrange the strawberries in a graham cracker crust. Combine the other ingredients and bring just to a boil then pour over the strawberries. Let it set up for a few hours and serve with fresh whipped cream. It is heavenly!!!

I’m changing from a western diet and medicine thoughts to retraining my brain to an eastern diet and medicine, as well as 100% organic food with zero pesticides, and I do mean zero. Organic strawberries or ones that you grow are so much more sweeter than you can imagine so no sugar is needed. I just slice them up and arrange them on a pretty plate, get out the holiday silverware, and treat myself that way. I feel great afterwards! It’s a very fun and fresh treat.

My kids who are in their late teens and getting ready to go off to college, however, aren’t on board with me but it’s easy enough to “fool” them. I bake my own angel food cake with organic flour and ingredients, put the strawberries into a blender and they still have a fun desert that’s healthy and organic. I just leave out the carbs since I’m detoxifying. I know that’s probably more than you wanted to hear but eastern medicine and organic lifestyle is the best!

Good luck everybody and thank you for your generous prize Nichole. Very exciting release this time around – but what release isn’t exciting?!

    8 strawberries, hulled
    1/2 cup skim milk
    1/2 cup plain yogurt
    3 tablespoons white sugar
    2 teaspoons vanilla extract
    6 cubes ice, crushed

When I was first married, my inlaws were coming to visit for the first time and I wanted to make something special for dessert. I saw a recipe in a magazine for an Italian Strawberry tart. It has a very simple but delicious butter crust with lemon zest. You assemble the strawberries with the points up and then glaze it with apricot jam. It is so simple yet so amazing – with some homemade vanilla ice cream – heaven. And needless to say it was a huge hit and I’m still making it today.

My favorite is a strawberry-pretzel dessert. I use this recipe from Paula Dean

    2 cups crushed pretzels
    3/4 cup melted butter
3 tablespoons sugar, plus 3/4 cup sugar
    1 (8-ounce) package cream cheese
    1 (8-ounce) container whipped topping
2 (3-ounce) packages strawberry gelatin dessert mix
    2 cups boiling water
    2 (10-ounce) packages frozen strawberries
    1 (8-ounce) can crushed pineapple
Whipped topping or whipped cream, to garnish

Preheat oven to 400 degrees F.

For the crust, mix the pretzels, butter, and 3 tablespoons of sugar. Press this mixture into a 9 by 13-inch pan and bake for 7 minutes. Set aside and allow to cool.

In a mixing bowl, beat together the cream cheese and 3/4 cup of sugar. Fold in the whipped topping, and spread over the cooled crust. Refrigerate until well chilled.

In a small bowl, dissolve the gelatin in the boiling water, and allow to cool slightly. Add the strawberries and pineapple, and pour over the cream cheese mixture. Refrigerate until serving time. Serve with whipped topping or whipped cream.

Add a little whipped cream and you have the best dessert ever. Could be because my birthday is in May and my mom would make this every year for my birthday. YUMMY!

I love strawberries with just a little splenda sprinkled on them, but I also make a dessert that has layers of crushed vanilla wafers, vanilla pudding that has been combined with sweetened condensed milk and cool whip, and sliced strawberries. Its yummy and looks pretty in a glass bowl. Also, Pioneer woman has a strawberry shortcake cake in her her cookbook that looks awesome!

Easy answer: Strawberry Glace Pie! It’s been in the Betty Crocker cookbook for years.
    1. Make and bake a single piecrust.
    2. Soften a small package of cream cheese and spread over cooled crust.
    3. Slice lots of fresh strawberries, reserving some to make a glace: sugar, water, cornstarch, some smashed berries.
    4. Fill piecrust with fresh berries, and pour glace over.
    5. Chill and serve with whipped cream.

    YUMMMM!!

    2. Strawberries topped with mascarpone in which you stir some yoghurt and some vanilla suger (so much nicer than cream).

OMG Keri H That is what I was going to say lol. I too love my Moms Strawberry rhubrab pie. I grow the strawberrys and she grosw the rhubrab and she makes the pie. My daughter loves what she calls the Strawberry delux. she only drinks water (her choice she is 8) but she loved to have strawberry cut up in her water with on slit on the side. I have a pic of her eating strawberrys hot from the sun and just picked from our garden. She would go from the pool to the garden just to eat them. She also loved them cut up on her pancakes. by and see.http://jess-sliceingstampingineyecandyland.blogspot.com/2011/06/strawberry-heaven.html

At the moment this recipe is our favourite

    Happy Spoons
    Pistachio mousse with strawberries

    100ml cream
    100g mascarpone
    30g icing sugar
    1 teaspoon pistachio puree
    2 fresh strawberries
    chopped pistachios

Whip the cream with the icing sugar until stiff. Then fold in the mascarpone and pistachio puree carefully.
Pour the mousse into a icing bag with a big nozzle and squezze it on to a porcelain spoon.
Wash strawberries, cut in half and dry. Put a half strawberry onto the mousse and sprinkle with pistachios. (from mal-kurz-in-der-kueche.blogspot.de I love this blog)

I have a great recipe for strawberry tarts. You make your tart shell out of rice krispie cake. A little finicky but worth the trouble. Then use either fresh straberries that have been sprinkled with sugar (to make a little juice) or frozen strawberries and reserve the juice. Make a strawberry jello and only add the hot water to dissolve. Then add half of the cold water but augment with your berry juice. let set partially so it is not runny then spoon strawberries and jello into your krispie cups. Let set fully and top with whipped cream and a fresh berry slice. Your family will gobble them up!

And, it doesn’t have that bite to it that the already made pie filling in the bags at the store do. If I’m being ambitious, then I make my own crust. If not, I just put it in a bowl and consume more than the food pyramid experts would approve of 🙂

My husband’s favorite cake is my strawberry cake. I make it for his birthday every year and anytime we have a special occasion. I use frozen strawberries because then I can use the juice as a substitute for the water in the white cake mix. Then I add about half the container of strawberries to the cake and save half to use for the icing. I always make the powdered sugar icing (recipe on the powdered sugar box).

The tiny alpine strawberries I have in the garden always get eaten just as they are but I always buy up supermarket punnets when they are knocked down in price to make Freezer Strawberry Jam. Its so simple – no boiling or judging setting points.

All you do is crush about 2 pounds (900 gms) strawberries in a non-metallic bowl with a wooden spoon or masher. Stir in 1 pound of jam/preserving sugar then cover and place in an oven preheated to its lowest setting until the strawberries are warm but not hot. Remove from the oven and leave to stand for an hour, stirring occasionally until the sugar has disolved. After that stir in the juice of one lemon and pack into small freezer-proof containers, leaving plenty of room for the jam to expand on freezing. Seal the containers and leave to stand for 6 hours at room temperature, then refrigerate for 24-48 hours until jellied. After this store in the freezer.

Really its more like a delicious strawberry sauce than a jam and we love it over ice cream or stirred into yogurt – a real taste of summer in the dark days of winter.

My favorite thing with strawberries is just a memory most of the time. The summer following my junior year of high school, I spent a month in England as an exchange student. Almost any place you went (including the pubs, as the legal drinking age was 16), you could get a bowl of fresh strawberries smothered in fresh clotted cream. I was in heaven.

Once every couple of years I get a beautiful little bottle of imported clotted cream from some overpriced gourmet shop and pair it with some beautiful strawberries. I enjoy it, but it never tastes the same as what I remember.

My favorite thing to make with strawberries is a 3 layer chocolate cake with strawberry filling! Yum! I just make a regular chocolate cake but divide the batter into 3 8″ cake pans and bake for a little less than the recipe requires. Cool for 10 mins before removing cakes from pans and placing on wire racks.
The filling between the cakes is made from strawberries. Actually it’s supposed to be raspberries, but I don’t like them! This recipe is from Taste of Home.

Filling for Strawberry and Chocolate cake:
(original recipe is called Chocolate Raspberry Torte Recipe)

    3 oz cream cheese, softened
    3/4 cup cold milk
1 pkg (small) instant vanilla pudding
1 8 oz carton whipped topping, thawed
    2 cups chopped strawberries
approx 4 large strawberries for the top
    confectioner’s sugar

In a large bowl, beat cream cheese until fluffy. Combine milk and pudding mix; beat into cream cheese until smooth. Fold in whipped topping and strawberries. Place one cake layer on a serving plate. Spread with half of the filling. Repeat layers. Top with remaining cake. I like to slice the large strawberries into a fan shape (without slicing all the way through the strawberry) and place them on top of the cake. Dust with confectioners’ sugar.
*I have used light and low fat ingredients without a problem.

    2 1/4 c. water
    24 oz. fresh strawberries
Pre-made reduced fat graham cracker crust

Mix water, Jello and pudding in saucepan. Stirring constantly boil for 1 minute; cool. Pour over fresh strawberries. The berries could be in a pie crust, graham cracker crust or a cake pan lined with graham crackers. If using a 9 x 13 inch cake pan, the recipe would have to be doubled. For graham cracker crust, use light butter and equal top with lite Cool Whip. Serves 4.

My favorite thing to make is Strawbwrrie Rhubarb Apple Pie!! =)
With this recipe you can make 2 pies!! For one cut the recipe inhalf!!

    STRAWBERRY-RHUBARB-APPLE PIE
4 Granny Smith Apples (peeled and sliced)
4 cups of Rhubarb (cut in 1/2 inch pieces)
1 large container of frozen strawberries or 2 cups of fresh strawberries slices
    2 cups of sugar
    1 tablespoon of cinnamon
    1/3 cup tapioca
mix ingredients and add to either homemade pie crusts or prebought pie crusts!! Either way this pie is DELICIOUS!! =)
Place in oven at 350 for 20 minutes with tin foil around the crust edge, remove foil after 20 min. ans bake for another 20 min. or until light brown on top crust!! Trust me if you have NEVER tried Rhubard this is the BEST PIE TO TRY!! I added the apples to the recipe a couple years ago because I have some picky eaters, they LOVE this pie and I know it is because of the apples!!
P.S If you want just a Srawberry Rhubard Pie just omit the apples!! =)
THANKS for the chance to win and have a FABULOUS WEEK!! =)

Every year, I can’t wait for strawberry season! When they start showing up in grocery stores, my soul does a little celebration jig. When it comes to recipes, I am a strawberry purist … I love them most when they are fresh and plain and ready to eat. There’s nothing like a sunripened strawberry!

My absolute favourite thing to make with strawberries is freezer jam. For anyone unfamiliar with it, you make it with a packaged mix, half the amount of sugar of uncooked jam and you don’t cook it. This also means no sterilizing any jars once they’re filled. A huge perk! The jam is preserved in the freezing process and keeps its wonderful fresh taste. There is nothing better than enjoying that bright, beautiful, fresh strawberry jam taste in mid-winter. This month’s releases have made me anxious for strawberry season to arrive – it’s one of the best times of the year and I think everyone enjoys projects that evoke memories of strawberry season.

Love these projects you have posted today too 🙂 I LOVE strawberries and I am more than happy to just wash and eat them, but if I am going to make something with them, my favorite thing is fruit salsa. I found the recipe on allrecipes.com and it is called Annie’s Fruit Salsa. It has strawberries, kiwis, apples – all kinds of yummies and you make cinnamon tortilla chips to eat with it – that recipe is also included! So go check it out! It is so refreshing and yummy! The reason I double the recipe is because while I am making a pie and already have everything out I find it is SO EASY to make another one and then freeze it after I have the piecrust ontop. I wrap it in freezer plastic then place it in a freezer safe pie container!! That way if I need a PIE FAST for an event or special occasion and don’t have the time to make one homemade I have one already to go into the oven in the freezer!! You can keep the pie for up to 3-4 months as long as it is wrapped correctly!! =)
    I hope you’ll give the recipe a TRY!! =)

Didn’t have to think a second on this one. My kids always want a particular birthday cake that I made for them by accident one year. I tried poking holes in a strawberry cake and pouring blended strawberry down the holes. It was a murky, sticky mess, but they loved it and even though they are all grown up, still ask for that disgusting mess every year on their birthdays. Not my favorite, but then again it is because of the great memories.

To be truthful, a fresh strawberry picked from the vine and popped into my mouth is the berry best. Practically speaking, one of my favorite recipes is to throw 1/2 cup plain yogurt, 1/4 cup orange juice, 1 banana, 1/2 a dozen strawberries, and 1/2 a cup of ice into the blender on high and whirl until smooth. Pour into a tall glass with a sprig of mint. Makes a refreshing and nutritious bit of heaven for the palate.

And topped off with fresh strawberries. That simple and oh so delicious. If you are also nuts like me, or rather like nuts like me, then you can add a combination of your favorite nuts.

The strawberries have been so good lately…but the best are the fresh picked berries straight from the garden – so sweet! My fav dessert is a yellow cake topped with strawberries…yummo!
    A great release PTI!!

Strawberries have become so versatile – love them in salads with balsamic dressing and if I have the time having them with meringue and whipped cream – either Pavlova style or Eton Mess 🙂

I absolutely love strawberry shortcake so it’s my favorite thing to make. It helps that it’s my dad’s favorite dessert so I can always plan on making it for his birthday. We love strawberries so much that we have several garden boxes full of them. Hopefully we can get a bumper crop this year!

My favorite strawberry treat is strawberry shortcake using my mom’s shortcake recipe and the ripest June berries. Pure Heaven!

My favorite strawberry recipe is very simple and according to my granddaughter, Lily, it is awesomely awesome!

The most important part is the presentation. It must be created in a stem glass dessert bowl. All you do is alternately layer sliced strawberries and cool whip until it is above the rim! Easy, peasy . . . but so special in its presentation.

Her other grandmother called me one day to find out why Lily said her recipe was wrong. I had given her the “recipe”, but had failed to mention the stemed glassware and that is what made it wrong according to Lily! We laughed and I gave her one of mine so she could make it just right! We still laugh about it.

We can’t get good rhubarb where I live, but my mom used to grow it in our garden when I was growing up. She made the most amazing strawberry-rhubarb pie. The strawberries are ripening early in NC now, though, and I hope to go to a pick-your-oen farm nearby next weekend. We’ll just eat them plain or in strawberry shortcake.

I really love just eating the strawberries fresh but if the last long enough I love to make strawberry shortcake with homemade whipped cream. Nothing says summer like strawberry shortcake.
