Summer is all about getting fresh fruits and veges from the Farmer’s Market and making all kinds of salads. Filling a bowl with fresh cut kale and romaine lettuce…then tossing in homegrown tomatoes, carrots, sesame seeds, dried cranberries, black olives, sliced almonds, and balsamic viniagrette dressing. Add ingredients to ice cream maker. Add whole milk to fill. Freeze in ice cream maker. Eat with strawberries or homemade chocolate sauce. It’s what summer’s all about. 🙂

My favorite summertime recipe is definitely strawberry spinach salad with homemade poppyseed dressing. Such a perfect dish to take to a cookout! No cooking required, and you can make it ahead of time. I also love the homemade dressing – so easy, but it gives it that “I slaved away at this dish” touch!

I love fried squash and fried okra. When we were kids my mom would fry up platters and she could barely get it to the table before we would devour it. We would eat the okra like popcorn. That delicious crunchy crust she got by adding cornmeal to the flour that she breads them with…YUMMY!!!! That is my favorite summer recipe. Plus fresh cucumber slice, fresh coleslaw, and those wonderful vine ripened tomatoes. Nature’s bounty doesn’t need anything, except maybe a little salt.

Homemade pesto! Just had my sister out from NC and we made a HUGE batch. It tasted so good…..much better than the store bought kind!! Am going to make another batch before summer is over and freeze in ice trays and then store in zip lock bags. Makes it so easy when needing pesto for something.

This is so naughty….it’s Peach Fuzzes. My dad invented this blender drink. It’s fresh peaches, frozen lemonade, vodka and ice. I can’t make this concoction unless it’s sweltering outside…..it just doesn’t feel right at any other time of year.

Oh my…it just has to be homemade vanilla ice cream. We make it every July 4th. It tastes the best if it is hand-cranked. We actually made 2 batches one year: one hand-cranked and one with the electric ice cream maker. You could tell the difference…not as much air. However, most of the time we are lazy and use the electric one. It wouldn’t be summer without at least one batch of the creamy goodness. 🙂

Another family favorite are the loaded jalepeno peppers roasted with bacon and cheese! They make great appetizers! And here in WI you can’t enjoy summer without some fresh sweet corn and flavored butters!

My favourite would be pasta salad! With big filled tortelloni (cheese and nuts), pesto dressing, cherrie tomatoes, cold spinach, pine tree seeds (is that the name in English 😉 and some bread with it, ciabatta! Delicious! A large cold glass of water with it and a nice cool glass of white wine. Perfect! You should try it one day, it’s delicious! Hugs, Wendy

It’s called “Muesli”…my husband is German and the recipe came from his family growing up. (or maybe it’s a traditional German thing, I’m not sure). It’s oats, milk and a bunch of different fresh fruits mixed together (that’s the basic gist anyway, there may be a few other minor ingredients). It is served cold and is SO delicious! With all the lovely fruits that summer holds, it really is like a taste of summer.

Without a doubt, my favorite summertime recipe is fresh, grilled corn on the cob. I have such fond childhood memories of going to the nearby farm, filling up brown paper bags full of corn, then going home to shuck and prep the corn for the grill. We would eat nothing but the corn for supper, while sitting on our deck waiting for the stars to come out. Of course my favorite summertime dessert of smores would occasionally follow the grilled corn.

My favorite Summer time recipe is Home made angel food cake (takes a dozen large brown egg whites)*the house always smells DIVINE as it’s baking, then after its cooled top with “better than frosting”: mix together 1 container of strawberry yogart, 1 container of sour cream and 1 container of cool whip (cool whip & sour cream are the same amount) whip & spread evenly over the top of the angel food cake and adorn with fresh sliced strawberries & blue berries. It’s a LIGHT, refreshing, YUMMY way to celebrate DESSERT with out all the extra heaviness of a CAKE or the extra sweetness of store bought frosting! WE LOVE it~!

Sham Torte , It was my great grandmothers farm recipe . I will for ever think of her on the farm making this all time family favorite . She used wild raspberries , but we often make it with strawberries . Egg whites, cream , sugar, and berries.

My favourite summer dish Is Greek Salad. A recipe I fell in love with during a two month stay in Greece. Sliced cucumbers, sliced tomatoes (tomatoes that taste the way they used to), sliced onions, and goat’s feta crumbled over top with kalamata olives. Extra virgin olive oil drizzles on top. Fresh crusty bread. Nothing better.

Red, White & Yahoo is my favorite summertime recipe. It is a chickpea, grape tomato & bocconcini cheese salad with fresh basil from my garden. Yummy! My youngest son loves it so much that when he was little he used to cruise from plate to plate eating everyone’s chickpeas.
