I bring deviled eggs, and they are the first thing that runs out. I don’t really use a recipe; just a combo of mustard, mayo, sweet pickle juice, celery seed, salt, white pepper.

I bring a salad make simply of spinach or spring mix greens, sliced strawberries, and fresh blueberries. I bring a homemade dressing in a bottle along side and done. Easy, light, summer, and healthy!

I love to bring broccoli salad!
Dressing:
1/2 cup mayo
2 tablespoons apple cider vinegar (white works too if you are out of apple cider!)
2 teaspoons of sugar
Salt and pepper
4 cups of broccoli florets, chopped
1/4 – 1/2 cup of red onion, depending on your taste
1/2 cup of golden raisins
1/4 cup sunflower kernels
There are a lot of variations you can do and I use what I have on hand.
Green onions
Dried cranberries
Shredded cheese
Crispy bacon, chopped
Also, you can use more or less of the dressing depending on your tastes. This is a great way to add something green to the summer buffet among the potato and pasta salads.

I make what I call “roll ups”. They are made with 2 blocks of softened cream cheese, one packet of dry ranch dressing and my husband’s canned vegetables (info on that in a minute) then spread on a garlic/basil tortilla and rolled up. After refrigerating, I cut them into bite size pieces. My husband cans peppers, cauliflower, and green tomatoes. I chop them up finely (think of relish) and add chopped green olives, basil, organo, parsley, and a little olive oil. This is a staple in our home. We use it on hamburgers, hot dogs, pizza, in Mac and cheese, etc. everyone loves it as well as my “roll ups”!

I love bringing a Turkish bread and all kinds of things to put on it, like tomate tapenade, aioli and other delicious treats. Tearing the big bread on a picnic blanket in a nice surroundijg, immediately feels so free and fun!

My favourite thing to bring is a couple of dips (usually hommus and chilli cream cheese) with a whole lot of veggie sticks to eat it with (eg carrot, celery, cucumber, red capsicum, etc) – even kids will eat veggies that way!

I love to bring the dessert. Pavlova with fresh cream and fresh fruit with dark chocolate lightly drizzled over t top. My grandmothers recipy, the pavlova is crisp on the outside but marshmallow on the inside. Family favourite.

Savoury, homemade rolls are my familys favourite, using a standard pizza dough (500 grams of flour (white or whole wheat), 10-20grms of fresh yeast, 1 cup of water, 1 teaspoon of salt, olive oil to taste) and either mixing in cheese, peperoni, spring onions, salami-leftovers, pizza herbs, chili paste etc. or rolling out the dough and spreading the ingredients, then rolling it up and cutting it up to make rolls. Baking them for 15 – 20 minutes at 200 degress Celsius/375 F.
They disappear very fast, so I usually make at least the double amount and vary the ingredients.
They are best eaten fresh, but they do heat up nicely in the microwave for a few seconds.
As always, I amazed at the amount of creativity the Papertrey-team displays. I´d love to try each and every project!

I always bring our family’s potato salad – my Mother’s recipe and it’s the best. We don’t measure anything, just combine in a bowl. Potatoes, eggs, dill pickle, and thinly sliced green onion. The dressing is mayo, mustard, a little bit of the dill pickle liquid and salt and pepper.

Mandarin Coconut Bowl is always a hit: One large can pineapple tidbits, drained; one large can mandarin oranges, drained; one cup seedless grapes; one cup coconut; one cup miniature marshmallows;one cup sour cream. Mix and chill.

Ha, ha! Funny you should ask that. Just got back from a party where I took a family favorite (baby spinach with strawberries, candied almonds, and poppy seed dressing) and was embarrassed to find that the only other salad brought to the party was an almost exact duplicate! Kinda like finding someone else in the same outfit you are wearing. Guess it’s time to come up with a new alternative.

I bring watermelon cut into cubes for the adults and slices for the kids and also key lime squares. I modify the key lime pie recipe and make it in a 8×8 square pan, cut it into bars and bring a can of whipped cream for people to add to their own taste. It is quick and easy and travels well.

My fave summer dish is buffalo chicken dip. It goes over really well with blue cheese lovers! Cooked chopped chicken, hot sauce, cheese, mayo, dash of lemon juice. Mix in casserole dish and top with crumbled blue cheese and bake.

I like my corn bread bake my step mom makes a lot. Its on the back of a Jiffy Corn Bread box I believe and it has whole kernal corn, and creamed corn along with the cornbread and eggs and milk and sour cream and I think cream cheese. Its really really good. I also like desserts with rhubarb and I like my best friends Pan de Coco she makes its a sweet bread with a sweet filling made from coconut and brown sugar I think. its really good.

I usually bring what I call “Hey” Potatoes. They are named after friends who brought them to me when I just had baby #2. They didn’t have a name for them so I named them after them. Really no recipe, cube red potatoes. Sprinkle salt, pepper, and garlic powder. Stir. Cut a stick of butter into slices, arrange butter on potatoes. Cook at 350 for an hour (depends on how thick the cubes are), stirring every 15 minutes. Stirring helps mix the garlic and butter. We like garlic so we usually put on more. We like butter hence we use a stick. You can use less of course, to taste. Mmmmm!

Oh, what a great question! And I’m loving the answers so far (esp Allison’s Broccoli Salad!). I like to bring Deviled Eggs — but we call ’em ANGEL EGGS because I put HONEY in the mix. DH boils and peels eggs for me. Then I make the mix — egg yolks, mayo, Gulden’s mustard and HONEY. Sorry I don’t measure, so just start with a big blob of mayo, a couple of big squirts of Gulden’s and a couple of big squirts of honey — stir, taste, adjust.

My favorite recipe lately has been a “salad” of corn, cherry tomatoes, fresh diced mozzarella, diced avocados, diced onion, and black beans. I usually just make a fresh balsamic vinaigrette dressing for it. You can make as much as you need and it’s wonderful with chicken added. Or pasta added. I make an Asian pasta salad that always disappears. It takes minutes to make and I usually have everything on hand.
1 package long, thin noodles (Asian or spaghetti)
Raw and cooked veggies (I literally use what I have on hand but favorites are spinach or cabbage, matchstick carrots, broccoli, green beans, radishes, red bell pepper) – as many as you want
6 T soy sauce
4 T toasted sesame oil
2 T Sriracha (spicy chili sauce)
4 cloves garlic, smash
Cook the noodles, drain and rinse. Place in bowl, add veggies. Mix remaining ingredients together in a small bowl and add to the noodle mixture. Mix together.
Serve warm, cold or room temperature. I serve it with more Sriracha and raw shelled peanuts.

I am known as a cookie baker, so I bring a large tray of assorted homemade cookies. Love this finger food: Mash a block of cream cheese with a packet of Italian salad dressing seasoning. Spread onto cut wedges of pita bread. Top with thinly sliced cucumber and sprinkle with lemon pepper.

I love to do a watermelon basket. I draw the basket on the outside of the watermelon with a sharpie, drawing on the handle over the top and usually making scallops around the edge with a little hole in the middle of each scallop. Then I cut the design with a sharp knife, making the holes with an apple corer, which makes a perfect small hole. After lifting the rind off of each side of the handle, I scoop out the watermelon, using the melon baller (both sizes) until I can’t get any more out, then I scrape the insides clean the rest of the way. I scoop melon balls from cantelopes and musk melons, add in red and green seedless grapes, and I mix all the balls together and pour them back into the melon basket. Then I line the edges with slicesd strawberries. It’s ALWAYS a hit!

I like to bring a pasta salad. Either fusili or rotini and then I add chopped green and red peppers, celery, zucchini, cucumber and halved cherry tomatoes and a couple of jars of marinated artichoke hearts and all the lovely juice that comes with them. I love to make fresh guacamole – and if you’re in a bit of a hurry here’s a tip: most grocery stores have a homemade or local fresh pico de gallo in their deli section. Look for one with tomatoes, onion, jalapeños and cilantro. Then mash 4 avocados, squeeze the juice of one lime and stir, add pico to your liking, and some salt and garlic salt to taste. Perfect, easy guacamole!!!

You make a batch or two of brownies, once they have cooled you crumble them up. In a bowl you can start with whatever you want, but you layer the dessert in a bowl.

I love to bring my rendition of an “everything but the kitchen sink” pasta salad to summer parties. I use whole wheat pasta, and toss in diced roasted red peppers, sun dried tomatoes, green onions, huge double stuffed green olives (stuffed with jalapenos and garlic–I get them at Costco), some canned corn and the best part–smoked mozzarella. I toss it all together with garlic salt and olive oil, and voila! It’s always been a huge hit wherever I’ve taken it.

My summer time favorites are always fresh fruits. Watermelon slices are easy and a crowd pleaser. But our garden gave us a boatload of strawberries and cherries to share this year.

I don’t do much cooking anymore so easy is always my goal. Festive & refreshing, fruit salad with loads of color, blueberries, raspberries, grapes, watermelon, kiwi, apples, any other fruit you’d like to throw in . You can whip up a yogurt, cream cheese dressing to put on the side. My other favorite that I just discovered last year, corn on the cob, spread with a little mayo, butter & sprinkle with Tajin Clasico seasoning….that hint of lime with the mix of all the other ingredients is so yummy, makes my mouth water just thinking about it.

Boil the Quinoa
Chopped tomatoes, green onions, peppers of all colors, cubes of gorgonzola, chopped med. black olives, parsley and seasoning.
Toss with EVOO, lemon juice and red wine vinegar.
Very fresh, very gone at the end of the day!

Thai pasta salad is a definite winner in my house. You can prepare it in advance ( it tastes better if you do 😉 ) and it can be served hot or cold. My recipient has changed over the years, because some of the ingredients gave been discontinued so I’ve had to improvise and reinvent it. But always still a great dish to take along.

A strawberry/cream cheese cake! I won an award for this way back in the 80’s. It’s yellow cake mix made using the pound cake recipe on the box in 2 8″ or 9″ circle pans. The two layers are sliced horizontally in half. Then the fun begins. Thaw a box or two of frozen strawberries that have sweetener added-can be pulsed in blender for smoother consistency. Layer the bottom cake first with a thin layer of cream cheese icing, then a layer of fresh strawberries, drizzle lightly with thawed berries and juice, repeat for next two layers. Then use your favorite cream cheese icing recipe to frost the entire cake (I sometimes used store bought icing which still is great). Lastly put your prettiest strawberry slices in a nice pattern on top and drizzle remaining juice. Delish! Keep refrigerated. (the frozen strawberries are for added moisture but this step can be completely left out as well)

Quinoa, feta cheese (crumbled), any finely chopped vegetables (red onions, carrots, broccoli etc.), cranberries, nuts…anything goes really. Simply dress with lemon juice and you’re done.

Mine’s traffic light dip:
Mash avocado, chopped chilli, lime, garlic and spread over platter.
Mix half a pack of chilli mix into crème fraiche, spread over avocado.
Dice red, green, yellow pepper and spring onion, scatter over top.
Serve with tortilla chips and scoop it up – colourful and yummy!

I love to bring Lime Butter Cookies that I got from a Better Homes & Gardens Christmas cookie magazine in 2001. The fresh squeezed lime juice and lime zest gives them a really fresh and unusual taste. The best thing about them is that the dough doesn’t need to chill or rest — you can do the whole thing in about an hour. And with their unusual taste, they are always a favorite!

My FAVORITE dish to bring is an Apple Snicker Dessert Salad!! You chop 4-6 Apples I like to use Red Delicious, Granny Smith and Yellow Apples for a Nice Variety of Tastes!! Goldrush brownies – my mom always made these for family events when I was growing up and now I like to carry on the tradition. They’re simple, yummy, and freeze beautifully so they are easy to make ahead.
2 sleeves graham crackers, crushed
1 can sweetened condensed milk
6 oz. (1/2 bag) semi-sweet chocolate chips
Mix all together, press into a greased 9×13″ pan and bake at 350 degrees for 5-10 minutes (just to melt chocolate). Cool, cut into squares and roll in powdered sugar.

I usually bring a cucumber and onion salad, such a great summer dish. Use narrow cucumbers peeled and sliced and thinly sliced sweet onions ( I use Vidalia) in a sour cream and vinegar dressing. I just add vinegar to the sour cream until I like the taste and it’s usually a little thicker than milk and I like it a little tart. So refreshing.

Easy pasta salad. Colored spiral noodles, sliced olives, cubed turkey kielbasa, shredded cheddar cheese, mushrooms, raw broccoli, and Bernstiens cheese and garlic salad dressing. Mix together, pour dressing over and refrigerate over night. Flip bowl used down for a few hours in fridge. Take outand enjoy!

My favorite recipe is a Jello dessert. Simply make three or four small size flavors using half of the cold water and allow to set-up until firm. Cut into cubes and toss together. Add the colorful blend of Jello cubes into the following: make a small packet of lemon jello using pineapple juice for the cold liquid and when slightly thickened mix together with a large tub of Coolwhip. I always serve this delicious dessert in a clear bowl so that the colorful cubes show through the white mixture. Very festive, pretty, and most of all delicious. Change colors for holidays. Yum

We seem to favor a Tortellini Pasta Salad that is fairly ‘free-form’ in nature. I like to try different things, but my layered taco dip always gets eaten up I have a cream cheese version and a sour cream version. Favorite recipe to bring – wet cornbread. It’s not your northern, dry cake-like cornbread, instead it’s dense and sort of creamy. My parents-in-love love it for dessert but I serve it as a side dish.

Another beautiful release. I’m happy to share this macaroni salad recipe I found in a local Church cookbook. It’s been a hit at whatever event I’ve brought it to. Enjoy!
Salad ingredients
2 – 7 oz. boxes shells macaroni
1 green pepper, diced
2 tomatoes, diced
1 onion, diced
6 eggs, hard boiled and diced
Dressing ingredients
2 cups mayonaise
3/4 cup granulated sugar
1 Tablespoon mustard
1/2 cup sour cream
1 Tablespoon vinegar
Prepare macaroni according to directions. Combine in bowl with diced ingredients. Mix dressing and coat ingredients. This makes a party size serving.
The dressing is also good for potato salad.

It’s not my favorite, but I generally pick up something from Costco. I always say that when I am retired I will have more time to cook. Realistically, I will still shop at Costco even then because I would rather spend my extra free time crafting! Great release this month!

My new favorite thing, which I just took to a party Friday night, is “Barb’s Buffalo Chicken Dip”. Everyone loves it. Serve warm with “dipping” corn chips. (I have discovered that I also enjoy the leftovers right out of the fridge. But it microwaves very well, too.)
Barb’s Buffalo Chicken Dip
1 8 oz pkg cream cheese
2 12.5 oz canned chicken
1/2 cup Ranch dressing
1/2 cup shredded cheese (Mexican 4 blend is good)
1/4 cup hot sauce (Franks,Tabasco, etc.) You can use more or less, to taste.
You can microwave this, stirring often. But I heat it on the stove in a heavy pan. I heat everything but the chicken so that you can get everything blended. Then add the chicken & make sure it’s broken up really well.

Homemade fresh salsa, guacamole and delicious fresh Sweet Summer Lemonade.
Sweet Summer Lemonade
12-14 lemons
2 cups sugar
water (roughly 9-11 cups)
1. In a pot, dissolve sugar in 3 cups of water over medium/low heat. Once dissolved remove from heat and cool.
2. Juice about 12-13 lemons, reserving one to slice and drop into lemonade pitcher. Store in refrigerator until ready to make the lemonade.
(steps 1 & 2 can be done up to a day ahead of time)
3. Pour lemon juice and 3/4 of the sugar/water mixture into a large pitcher. Add 4 cups of water, taste test to see how tart or sweet the lemonade is. Adjust accordingly. Add more water if it’s too strong, and if it’s too tart, add more sugar/water. If you are pouring over ice, be sure not to over dilute the lemonade. The melting ice will dilute it a bit.
So refreshing and tasty. Enjoy!!!!

My go to recipe for the summer is a pasta salad. You just cook up any type of pasta as you normally would. Chop up any variety of veggies that you like (I do cukes, tomatoes, & green pepper.) and some green onion (I’ve used red onion, too.) Toss everything in Italian dressing and sprinkle in some Salad Elegant from Penzey’s Spices or Pasta Perfect from McCormick’s. Yum!

All of our family & friends really enjoy a light sugar free & very refreshing punch I bring to all summer gatherings. It is so easy & quick to make too! In a large container mix the following ingredients: 2 pkgs of generic crystal light raspberry ice (Wal Mart brand is what I use ), I large can of unsweetened pineapple juice, 1 2 liter bottle of Diet Sprite, 6 oz of orange juice, 3/4 C of Splenda or generic equivalent, & 2 qts of water. Stir well. That’s it! I keep the empty 2 liter bottles to store the punch. Easy to transport that way.

My favorite dish to bring to a cookout is baked beans. my recipe is simple
Bush’s original baked beans, 3-4 tablespoons of yellow mustard, 1/2 cup of dark brown sugar, 3 teaspoons white sugar 1/4 cup of bacon and 1/2 cup crushed pineapple with juices mix together salt and pepper to taste and heat not the stove for about 10 minutes or until all ingredients have married. Move beans to a casserole dish and bake on 375 until the beans are cooked through & sauce thickened. Super yummy for the summer.

We love to take frozen fruit salad to any gathering, but it’s especially refreshing in the summer. 8oz of cream cheese mixed with 3/4 c sugar and frozen strawberries. Fold in 8oz cool whip, 2-3 bananas, and a can of pineapple. You can add any fruit you want or nuts. Freeze for at least 3 hours and then thaw for a couple mins before serving. It’s almost a dessert, but since it’s “fruit salad,” we always call it a side. 🙂

My go to dish is strawberry cups. Simply make tart cups out of a rice krispie treat recipe. Mix strawberry jello only substitute the cold water with the juice from a container of thawed froze strawberries. Let the jello set up partially in the bowl till it is loosely set and then mix in the strawberries from the container and spoon into the cups. Let set fully and top with whipped cream. They won’t last long!

I can’t stand potato salad because of all of the celery that’s put in sometimes and it’s so heavy to eat on a hot summer day. I played around in the kitchen one day and came up with this bacon potato salad with a bit of olive oil and red vinegar.
I don’t like macaroni salad either because of all of the celery – I don’t like celery I suppose – and it sounds gross but it’s really good. Boil your macaroni, drain it when ready, add some mayo and some ketchup then throw in some shrimp.

Broccoli Salad
1/2 cup raisins
2 pounds broccoli, cut into flowerets
1 cup red seedless grapes, halved
3 green onions, thinly sliced
2/3 cup mayonnaise
2 tablespoons tarragon vinegar
1/4 cup slivered almonds, toasted
8 slices bacon, cooked and crumbled
Soak raisins in hot water for five minutes; drain. Combine raisins, broccoli, grapes, and sliced green onions in a large bowl. Combine mayonnaise and vinegar, stir into broccoli mixture. Cover and chill. Stir in almonds and bacon just before serving. 6 to 8 servings

I like to bring italian tomato salad. You cut tomatos in small pieces, then red onion also in small pieces, you add fresh basil, oregano, olive oil, and salt. Then mix everything together. It’s great and fresh! I love it.

What I take along depends rather on the occasion, if it is a more sophisticated event I might make salmon rillettes and Melba toast, a blackcurrant trifle…for a more simple occasion it might be a potato salad and a mixed fruit platter. Whatever the event, I always incorporate whatever food is fresh, seasonal and local. We are so lucky to live in a location that abounds with delicious foods all year round and I thank my lucky stars for my good fortune.

Something that I usually bring that goes over real well is called Lettuce Lasagna, It is a layer salad. The bottom layer is torn lettuce, then you add 1 cup of each of the following: chopped green pepper, then chopped celery, then chopped purple onion, frozen peas, then spread a mixture of 11/2 cup salad dressing (like Miracle Whip) with about a Tb spoon of sugar over the salad. Sprinkle with loads of grated cheddar cheese and bacon bits and then dig in!!! So good!

The dish I love to bring to summer gatherings is a yummy and refreshing watermelon salad from Bon Apetit. It is made with cubed fresh watermelon, fresh lemon juice, fresh chopped mint, a little bit of sugar and a splash of raspberry vodka. If I don’t bring dessert, I bring Broccoli-Pasta Salad. It includes bacon, red onions, seasoned croutons and a mayo dressing with Parmesan cheese, basil and a bit of sugar. My son loves it, and is always happy to have leftovers if there are any!

Love this release! My favorite food to take are: Roast beef mini sandwiches. Easy peasy…take one loaf French bread and split longways. Pull out some of the dough center on both sides and start layering: thin sliced roast beef about 1 pound, top with sprouts, then spoon on 1/2 cup cranberry sauce mixed with 1 tsp. grated orange rind, then mix 2/3 package cream cheese with horseradish sauce to taste and spread on top half of bread, lay on top, secure with toothpicks and cut into slices. Enjoy a zesty sweet n savory sandwich.

Sweet potatoes, carrots, onions, mushrooms, red potatoes, green peppers, and green beans all baked with the special sauce (1/2 t ginger, 1/2 t cumin, 1 t chili powder, and 2 T olive oil) I usually at least triple the sauce, depending on the amount of veggies. Can do with chicken too, but alone is great also.

Oh my favorite recipes for summer are always desserts…Lemon Delight is one I love to bring. Recipe:
Heat oven to 350
1 cup flour
1 stick butter, melted
1 cup chopped nuts
Mix together and press into 9 x 13 baking dish
Bake for 10 minutes or til crust is golden
Remove from oven and let cool
1 8 oz package cream cheese *can substitute light cream cheese
1 8 oz container Cool Whip * can substitute light Cool Whip
1 cup confectioners sugar
Beat together til soft curds from. Spread over cooled crust.
1 large box lemon flavor instant pudding. *can substitute sugar free
Mix according to package for pie filling (uses less milk) Pour over cream cheese mixture. Refrigerate 2-4 hours

People ask at ever gathering what’s in the fruit salad and they are amazed that it’s so simple. Be sure to use a press type squeezer to get those yummy oils from the rinds.

Line an 8×4 inch loaf pan with foil. Mash 2 cups of strawberries in large bowl. Stir in condensed milk, juice and 2 cups of cool whip. Pour into pan.
Combine chopped cookies and butter until mixed well. Press into mixture. Cover.
Freeze at least 6 hours. To serve, invert onto plate. Remove foil. Frost with remaining cool whip. Top with remaining strawberries.

Yet more wonderful PTI goodies {sigh}… My favorite thing to bring to a summer gathering is something fresh– be it a salad or a fresh berry pie or bruschetta or just fresh baked bread and butter– it depends on what I have on hand or in the garden.

I always get requests for the Mostaccioli Salad I make. I got the recipe 29 yrs ago, from Shirley, a native MN gal, I worked with. It has mostaccioli, cucumbers, tomatoes, onions, green peppers (opt), apple cider vinegar, sugar, dry mustard, wet mustard, salt, pepper and Paul Prudhomme’s Vegetable Magic seasoning (this wasn’t in the original recipe, I added it a couple decades ago.) You chop the vegetables while you cook the pasta. Drain the pasta, don’t rinse so the sauce will cling to the starch. Mix the sauce ingredients. Add the pasta and veggies to a big bowl. Add the sauce, stir it in and marinate it in the refrigerator overnight. To allow the delicious sauce to fully saturate the ingredients, I usually divide it into gallon ziplock bags and lay them flat, turning them a couple times. I have seen so many people spooning out “extra” sauce to “drink,” that I now make an extra portion to take with the salad. Hee! 🙂 Sometimes I chop the veggies and make the dressing, put in bowls and serve it with fresh French or crusty Italian bread. If the bread is “day old” I cube it and put some in each bowl. My favorite to bring is this light and refreshing Mango Blueberry Salad:
1 tsp lime zest (finely grated)
2 tbsps lime juice
1/4 cup honey
2 mango (medium, peeled, seeded, and cut into cubes)
6 cups fresh blueberries (about 2 4.4-ounce containers)
1/4 cup fresh mint (chopped, optional)

It depends on the picnic crowd. If there will be lots of kids, I usually keep it pretty simple – your basic pasta or fruit salad. If it’s mostly adults, I like to bring a cold salad of some kind, but something a little more sophisticated. This cold and chickpea fiesta salad with cilantro-lime vinaigrette dressing is one of my current favorites.

I always take a cold corn salad. It sounds funny but I always get asked for the recipe after the first bite. So easy to make for a last minute get-together.
CORN SALAD; 1can white corn,1can yellow corn, 1/4 cup mayonaisse, 2 Tbls. chopped onion. Mix well & refrigerate. When ready to serve add a small bag of crushed chili cheese Fritos. (Or you can serve these beside the salad & people can add their own.) It is really delicious!

I bring fruit pizza! Sugar cookie base baked till just lightly browned on a pizza pan or low sided cookie sheet. A block of softened cream cheese mixed with 1/2 to 3/4 cup sugar spread on top of cookie base. Cover cookie and cream cheese mixture with fruits of your choice. We like drained mandarin oranges, halved grapes, kiwi slices and strawberries. Mangoes would be great too!

I LOVE to bring cookie cups!! They are SUPER easy and everyone loves them! In fact last BBQ we had my friend said she wouldnt come if I didnt make them! 😉
Using the store bought cookie dough (the one that is cut in squares) you put a square in each mini muffin cup, bake about 11 minutes.. add a bite size Snickers or Milky Way to each cookie bite.. put back in oven for about 1- 2 minutes.. then take them out.. I like to top them with choc. and caramel sauce, and sometimes even whip cream and nuts!! 🙂

I love to bring a big crunchy salad. You can’t mess this up I promise. Chopped carrots, red bell pepper, cucumber, celery, 1 bag of frozen corn and 1 can of rinsed black eye peas dressed with your fav Italian dressing. I use this recipe as a jumping off point and just use up what veggies I have on hand. It’s a big crunchy cool bowl of goodness 🙂

Ingredients
3 bunches finely chopped flat leaf parsley
1 cup chopped fresh mint
2-3 tablespoons fine bulgur
1 chopped firm tomato
1/2 onion or 2 scallions chopped
1/2 cup extra Virgin olive oil
1/4 cup fresh lemon juice
salt and pepper to taste
1/2 teaspoon cayyene pepper (optional)
Preparation
Prepare the chopped parsley and mint and set aside.
In a large bowl, mix Bulgur, chopped tomatoes, chopped onions/scallions with lemon juice, salt and pepper. Add to them the parsley and mint and olive oil and mix, adjusting seasoning by adding more oil and lemon if desired.
Serve cold garnished with romaine lettuce.

The dish everyone asks me to bring are meatballs in a crockpot. They go crazy about the gravy and can’t believe it when I tell them all it is is Campbell Golden Mushroom Soup (undiluted) and a few healthy swigs of Worcestershire Sauce. Just went to a neighbor’s barbecue two weekends ago and every single person there came up and asked me about the gravy. Kinda embarrassing. 🙂
