My favorite veggie is actually the artichoke. I learned how to make stuffed artichokes from my MIL and they are the most delicious thing! I stuff whole artichokes with a seasoned breadcrumb mixture, drizzle with EVOO and put them in a pressure cooker for 20 minutes. Mmmm….

I lost most any green vegetable, and my current favorite is brussels sprouts. Trader Joe’s sells them shredded in a bag, so I just saute them with a tiny bit of butter and olive oil until they wilt, then sprinkle chopped walnuts and lemon juice over them to serve. Yummy – even my husband eats them.

That’s a tough question because I pretty much like all vegetables, but I would have to say the romaine lettuce. I love a nice fresh, crisp salad and the romaine stands up well to almost any dressing.

This may sound weird, but butternut squash. I don’t know why, but my mother always made “Pumpkin Pies” out of butternut squash. After trying to make my pie from a real pumpkin, I think I understand as they are almost impossible to get split without an axe! LOL Butternut squash also make delicious low PP+ “French fries”!

Brussel Sprouts are delicious. I cut them in half, and saute them in butter, and when cooked through, I toss in more butter and some bread crumbs. Delish!

When I was a little girl, I would visit my Grandmother in the summer months where we would go pea picking on my uncle’s farm. We would come home and clean the peas, and she would prepare them using her famous “Creamed Pea’s” recipe – yummy! 🙂

My favourite raw veggie would have to be the fabulous tomato – they are so fresh and filled with flavour. I love tomatoes with bocconcini, basil and a drizzle of balsamic. If we are talking about cooked veggies, there is nothing better than caramelized roasted cauliflower – yum! 🙂

This prep can be used for brussel sprouts, asparagus, broccoli, cauliflower, zucchina and squash, sweet potatoes, kale, beets……

I usually eat all my veggies just steamed and plain. But I found a simple little recipe for green beans that I tried and it was fabulous!!I put fresh green beans on a baking sheet sprayed with pam. Sprinkle a little parmesan cheese and chopped garlic on top. Toss and bake at 425* for about 10 minutes, turning halfway thru. Yummy!!!

I have become a huge fan of roasted vegetables! Whatever we have on hand–mushrooms, onions, potatoes (white or sweet), carrots, parsnips, cauliflower. In the summer use fresh veggies–squashes, peppers, onions, etc. Cut to similar size, lightly drizzle with you favorite oil (one that is good with high temps without turning bitter or one whose flavor won’t over power the veggies), season with salt and pepper. Roast at 425 degrees till your desired doneness and crispness. I love to serve with a balsamic vinegar glaze! Delicious!!!

I take a whole unpeeled microwaved sweet potato and put it in my Vitamix with 2 cups of vegetable broth and whirl away. It tastes creamy and decadent, but has no dairy or fat! Yum!

My favorite way with the majority of them is to simply roast on the BBQ with EVOO, a little Himalayan salt and pepper. Have discovered though, Brussel Sprouts are very good raw in a salad. Almost prefer them better that way than roasted…..yum, tasty!

I love all my veggies! Only one thing beats a bite of the first tomato of the season on a BLT and that is our family recipe we have renamed “Harvest Stew” because we harvest most of the ingredients from the garden (the real name is Spicy Aegean Shrimp). Jumbo shrimp is sautéed in butter with fresh lemon juice, oregano, rosemary, cayenne pepper and chopped garlic. Add corn on the cob, new potatoes and baby lima beans. Serve with a good, crusty roll for sopping up the juice….delicious!

My favorite would have to be asparagus. I like to cover it in a little olive oil and sprinkle lemon pepper seasoning over top. I cook it for 10 minutes at 350. I then sprinkle a small amount of Parmesan cheese and broil it until the cheese melts. It’s extremely yummy 🙂

Lately my husband (he does all of the cooking) has been making the brussel sprouts sautéed with a bit of bacon or pancetta and onions. Very tasty!!!

I would say buttercup squash (especially in the fall when they are fresh from the garden) baked then add butter & salt! Otherwise like most veggies but tomatoes are my second fav!

Easy question! My favorite food (not just my favorite vegetable) is carrots. Ymmm! I love them any way I’ve ever had them. My current favorite is to have them roasted with cumin. Sometimes I get a 25 lb bag of Giant carrots from a food coop called Bountiful Baskets (bountifulbaskets.org) and they are gone in a couple of weeks. I think that heaven’s menu must surely have carrots in every meal! 🙂

Brussel sprouts and carrots! Cut the brussel sprouts in half and slice the carrots into 1/4″ pieces. Drizzle with olive oil and balsamic vinegar. Toss to coat. Roast in oven at 350 about 20 minutes. Sprinkle with a little sea slat and fresh ground pepper.

I I like the Asparagus roasted with olive oil and seasoned with Montreal steak seasoning or just blanched then submerged in ice water cut into tiny pieces and made into a cold salad with tomatoes, cucumbers, green onions and tossed with some Asian sesame dressing. The Broccoli I love roasted also or raw in a cold salad Here’s the recipe…
Serves 6-8.
1 bunch uncooked broccoli*
½ cup crumbled cooked bacon
½ cup cashews
1/3 cup raisins
¼ cup chopped red onions
Dressing
1 cup mayonnaise
1/3 cup sugar
2 tablespoons apple cider vinegar
Mix the first five ingredients in a large bowl.
In a second bowl, beat dressing ingredients together gently until smooth.
Toss the salad with the dressing approximately 10 minutes before serving to allow flavors to meld. Serve on chilled salad dishes.

My father every year would get out his seed catalogs and try new and different plants. We ate fresh veggies all summer and fall long. Favorite veggie? Probably broccoli; which is funny since I hated the stuff when I was a kid! I like it fresh in salads and such; but my favorite way to prepare it is probably to steam it and cover in cheese sauce. Nothing like wiping out all the great health benefits he he! But it’s so yummy though!

I love so many, but I am looking forward to my green beans. I boil them, then put in ice water. They are then added to sauted shallots in butter with rosemary and hazelnuts, and salt. Delish. It’s a Martha Stewart recipe.

Asparagus grilled with olive oil, sea-salt and pepper in the oven….or pan fried on the stove top. Add a little fresh shaved parmesan cheese on top and you have a meal in and of itself! 🙂

Roasted Brussels Sprouts: Cut the stems of the sprouts and halve them. Toss with olive oil, salt and pepper. I also add a Greek seasoning called Cavender’s that I like. Roast in a hot oven, like 425, for about 30 minutes, tossing once or twice in the process. I have converted any number of “I don’t like Brussels sprouts” people into “These are delicious” with this simple recipe.

I LOVE asparagus. I have a yummy recipe (maybe from Sunset magazine) for a summer asparagus salad where you blanch it, and then mix it with red onion, feta, fresh basil, and pine nuts. The dressing is a dijon mustard, olive oil, lemon juice mix. It’s so incredibly good! 🙂

Don’t laugh too hard….I love parsnips. Peel, slice in thin circles, boil till just tender, drain, spray olive oil from can in large fry pan, add butter, fry them till brown. Add more olive oil spray or butter if they dry out too much while frying. OMG…..Yum. We don’t eat as many potato’s any more. The vitamins and nutrients are excellent for you!

Corn on the cob is the best! For 1 person, husk an ear of corn, wrap it loosely in wax paper, microwave for 3 or 4 min., let it stand for a minute or so, add butter, salt and pepper. Ummmm!!

Although I do love me a great steak, I am pretty sure I am a closet vegetarian! I love vegetables! My favorite has to be grilled asparagus. I toss it in olive oil and sprinkle with lemon pepper, then grill for a few minutes until slightly charred but not burnt, and so that they still have a slight crisp to them. Yummy!

Right now, I am liking fresh zucchini out of our garden. I love to cut it in half horizontally and then slice it in half again vertically. Sprinkle seasoning salt and a little garlic powder and then brush with olive oil. Bake @ 400 for 20 minutes and you will be in veggie heaven!

I know that tomatoes are technically a fruit, but most of us think of them as vegetables. Home grown until ripe, they are the best! I love a GOOD Tennessee tomato any way. But I live in TX, and we just don’t get many good tomatoes. I like them raw, in a salad or sliced on a veggie plate with hot cornbread. Can’t beat it. Fresh green beans, roasted! Sprinkle with salt, pepper, garlic powder and drizzle on olive oil – stir. Bake in oven on 400-450 for 8-10 minutes (depending on how soft or crunchy you like). Half way through cooking, stir. I don’t measure anything-grab some beans and sprinkle. We tend to put on a bit more garlic powder and cook a bit less for more bite and crunch.

Right now I am roasting asparagus with olive oil, S & P, in a frying pan, at 500 degrees. When done, I pull out the pan, push the asparagus aside and break a couple of eggs into the middle of the pan. The fried eggs make a yummy sauce for the asparagus and good bread mops up what’s left!

Favorite veggie is a cucumber and I eat it raw (skin peeled of course). Used to pick them out of the salad bowl before dinner because I couldn’t wait.

I love so many veggies, but one of my favorites is to roast asparagus stalks in the oven with a little salt, pepper and olive oil. Then I add some balsamic vinegar and some slices of fresh mozzarella and put it under the broiler for a couple of minutes. Yum!

Since I love them all, let’s start with A:
Artichokes are amazing. Steam them until leaves are tender and pull off easily. Dip them in hollandaise and slide through your teeth to get the meat off. When all the leaves are gone, remove the prickly fiber to get the best part, ohhhh….the heart is sooooo good. Arugula is next..
..okay I could go on and on . Sorry.

Potatoes are my favorite! I love them cooked any and every way possible. Corn is a very close runner up. We typically cook it in boiling water and serve it with butter, but one of these days I’m going to try grilling it – maybe with some seasonings – I’ve seen photos of corn that way and it looks delicious!!
From the Vegetable Garden choices, artichokes would have to be my favorite. Our method of enjoying artichokes is to pressure cook them and eat them with a dip we make from mayonnaise, lemon juice, and tarragon. YUM YUM! This is another case of “I’ve never tried it any other way; but maybe someday.”
